Food philosophy

Cook simply, share often

Asalas food is generous and unfussy: seasonal vegetables, pulses, whole grains, olive oil, herbs and spices, good bread and fruit — and food eaten slowly, ideally with others.

There are no forbidden foods and no rules to obey; just a direction: closer to the land, closer to the table.

Influences

Amazigh & Moroccan influences

Flavours and habits that inspire the Asalas kitchen.

Atay — mint tea

Green tea brewed with fresh mint, poured from a height and shared. A ritual of welcome and pause.

Argan & olive oil

Argan trees grow in the Souss; its oil, olive oil and amlou (argan, almond and honey) are staples of the southern table.

Couscous & pulses

Friday couscous, lentils, chickpeas and beans — slow, sustaining and made to share.

Spices & herbs

Cumin, saffron, ginger, coriander, parsley and mint, used generously but gently.

Rituals

Everyday & seasonal rituals

Small acts that give the day and the year a shape.

Everyday

Once a day, make tea properly and drink it sitting down — alone or with someone.

Weekly

A weekly ritual of heat, scrubbing and rest inspired by the hammam, adapted for home.

Seasonal

Mark the seasons and Yennayer, the Amazigh new year in January, with a shared meal.

Sleep, rest & home

A home that helps you rest

Light, plants, natural textiles, fewer screens in the bedroom and a corner that invites you to sit and do nothing. Whether home is a flat, a rented room abroad or a van, small changes make rest easier.

  • Morning light, evening dimness
  • A tidy, cool, quiet bedroom
  • One comfortable place to read and pause
