Mint tea, the slow way

How to make atay — green tea with fresh mint — and turn it into a daily pause. A small ritual of welcome from Moroccan tables.

Sample resource created by the theme setup — edit or replace it.

You will need

  • 1 tablespoon Chinese gunpowder green tea
  • A large handful of fresh mint
  • Sugar to taste (traditionally generous — use less if you prefer)
  • About 750 ml boiling water

Method

  1. Rinse the tea with a little boiling water and pour it away.
  2. Add the mint and sugar, fill the pot and steep for a few minutes.
  3. Pour a glass and return it to the pot two or three times to mix.
  4. Serve from a height to make a light foam.

Drink it sitting down — alone, or better, with someone.
